Tagliatelle with pork fillet and salami

Ingredients for 4 servings:

  • 400 g tagliatelle pasta
  • salt water
  • 75 g Parmesan
  • 3 eggs
  • 100 g whipped cream
  • 1 onion(s)
  • 250 g pork fillet(s)
  • 2 tbsp olive oil
  • 50 g Italian salami (thin slices)
  • salt and pepper
  • nutmeg
  • basil for garnishing

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the tagliatelle pasta in plenty of salted water until al dente. Finely grate the Parmesan cheese and then whisk it with the eggs and cream. Season with salt, pepper, and nutmeg to taste. Peel and finely dice the onions. Cut the pork fillet and salami into thin strips. Heat olive oil in a pan and sear the pork fillet until brisket. Then add the onions and sear briefly. Season to taste with salt and pepper. Remove the pan from the heat, stir in the salami and the Parmesan, egg, and cream mixture, and heat briefly again while stirring (do not boil!). Mix the sauce with the drained tagliatelle pasta and serve. Garnish with a few basil leaves.
