Taki's strawberry curd

Ingredients for 8 servings:

  • 1 kg strawberries
  • 500 g low-fat curd cheese
  • 250 g curd cheese, 20%
  • 250 g quark, 40%
  • 150 ml whipped cream, liquid
  • 2 tbsp syrup, strawberry syrup or vanilla syrup (preferably homemade) otherwise 2 tbsp sugar

Whisk all types of quark with the cream and sweeten with the syrup or sugar. Wash, hull, and quarter the strawberries, puree half of the strawberries, and stir into the quark mixture. Carefully mix in the remaining strawberries. The amount of syrup used depends largely on the quality of the strawberries. We’ve also made the quark without it, and it was eaten up without a hitch. This calcium-rich recipe can replace lunch even in hot summer days. Even one-year-olds eat this quark with enthusiasm. For older children, you can also mix in a small amount of crunchy muesli (you can find a recipe for homemade crunchy muesli in my recipes). Of course, you can also halve the amount, but the quark will keep in the refrigerator for two days and can be served as dessert the next day.
