Ingredients for 4 servings:
- 180 g tapioca
- 500 ml water
- Salt
- Spice(s) to taste
- frying oil
Instructions
Working time approx. 10 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 20 minutes; Total time approx. 5 hours 30 minutes
Super crispy and delicious.
1. Rinse the tapioca pearls under cold water and then place them in a saucepan. Add 500 ml of water and a pinch of salt and cook over low heat, stirring constantly, until the pearls have mostly dissolved and the mixture has become a thick paste. 2. Season the paste to taste; fresh herbs, paprika powder, or beetroot juice work well. 3. Spread the paste on a silicone mat or baking paper and smooth it out to a thickness of about 0.5 cm. 4. Place in the oven at 70 °C for 5 hours to dry. 5. Then remove from the oven, break into small pieces, and deep-fry at 200 °C.
