Ingredients for 4 servings:
- 300 g wheat flour (pizza flour, Italian flour Tipo 00)
- 200 ml water, lukewarm
- 1 tsp salt
- ½ cube of fresh yeast
- 10 onions
- 3 cups sour cream
- 400 g bacon or salami
- 2 tbsp oil
- salt and pepper
- basil
- oregano
- 200 g mozzarella, grated, for sprinkling
Instructions
Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 30 minutes
For the dough: Mix the yeast with the water and let it dissolve. Add the flour and salt and knead everything in a food processor until a dough forms. Cover the dough and let it rest for one hour. For the topping: Slice the onions and dice the bacon. Heat the oil in a pan and fry the bacon until crispy. Add the onions, sauté, and season the mixture generously with salt, pepper, basil, and oregano. Now add the sour cream and mix everything together. Knead the dough again and roll it out on a baking sheet lined with baking paper. Spread the topping evenly over the dough. Sprinkle the mozzarella over the tarte flambée. Bake the tarte flambée for about 30 minutes at 200°C until golden brown.
