Tarte flambée

Ingredients for 4 servings:

  • 250 g flour
  • 2 tsp olive oil
  • 100 ml water
  • 1 tsp salt
  • 1 cup crème fraîche with herbs
  • 200 g bacon, diced or 2 bell pepper(s), diced
  • 150 g cheese, grated
  • 1 onion(s), cut into thin half rings

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 54 minutes

Alsatian tarte flambée, also vegetarian

Knead flour, salt, oil, and water into a smooth dough. Let the dough rest for a while. Then shape into four small round balls and roll each one out very thinly. Place the rolled-out dough on baking sheets lined with baking paper and spread with crème fraîche. Sprinkle with some cheese and top with bacon and onions. Bake in the oven at 260 degrees Celsius for about 4 minutes, until the tarte flambée is slightly crispy. If the oven only goes up to 220 degrees Celsius, leave it in for about 10 minutes. For the vegetarian version, use diced bell peppers instead of bacon.
