Tarte flambée with quark

Ingredients for 4 servings:

  • 1 point yeast (dry yeast)
  • 350 g flour (wheat flour)
  • 3 tbsp oil (e.g. mild olive oil)
  • 250 ml water, lukewarm
  • 1 tsp sugar
  • 2 tsp salt
  • 150 g sour cream
  • 250 g quark (low-fat quark)
  • 150 g bacon (diced)
  • 2 onions (cut into rings)
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

lower-fat version

Mix the yeast with the flour, add the oil, water, sugar, and salt, and knead into a smooth dough. Cover and let rise in a warm place for about 30 minutes. Mix the cream and quark and season with salt, pepper, and nutmeg. After rising, knead the dough again and roll it out as thinly as possible on a baking sheet lined with parchment paper. Spread the dough thinly with the quark mixture and scatter the onion rings and bacon cubes on top. Bake in a preheated oven at 250°C for about 15 minutes (depending on the oven, this may take up to 20 minutes).
