Thai Sweet Chili Sauce

Ingredients for 1 servings:

  • 2 chili peppers
  • 1 tsp sea salt
  • 180 ml water
  • 120 g sugar
  • 60 ml vinegar
  • 3 garlic cloves
  • 1 tbsp cornstarch
  • 2 tbsp water for mixing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

No flavor enhancers. Makes approx. 350 ml.

Combine all ingredients except the cornstarch in a blender and process until coarsely or finely ground to your desired consistency. Bring to a boil in a saucepan over medium heat, then simmer for about 3 minutes until the mixture thickens slightly. Now combine the cornstarch with 2 tablespoons of water and stir into the sauce. Let it simmer for one minute until the sauce thickens. Once cooled, pour into a small bottle or jar. Store in the refrigerator.
