Ingredients for 2 servings:

  • ½ bag of noodles (kritharaki)
  • 1 bunch of chives
  • 4 sausages, raw, with fine sausage meat
  • 250 g quark
  • 200 g cream
  • 1 Pepper
  • 2 tbsp tomato paste
  • curry powder
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Greek pasta with quark and sausages topped with chives

Boil salted water for the Greek pasta. When it boils, add the pasta and cook for about 12-15 minutes. They are ready when a skin forms on the water and the pasta is an even color. Stir well, as they tend to stick to each other and to the bottom of the pot. Cut the sausages lengthwise, remove the skins, and place the sausage meat in a bowl. Add the quark and finely chop the chives, then add them as well. Mix the three ingredients together well. Finely chop the peppers and fry them in oil. Then add the sausage meat, quark, and chives. It breaks down nicely when fried and hardly forms any lumps. After about 5 minutes, add the tomato paste, mix well, and heat through. Season with curry, salt, and pepper. Finally, add the cream and bring to a boil. Serve with the kritharaki. If the peppers are too spicy for you, you can leave them out.
