Ingredients for 4 servings:
- 1 kg fish fillet(s), frozen Pangasius fillet (approx. 5 slices) thawed
- 200 g herb butter
- salt and pepper
- Flour
- Rapeseed oil, for frying
- 2 bunch spring onions, cleaned

Clean and salt the fish fillets (do not add salt), then halve them lengthwise and spread generously with the herb butter. Season with pepper and roll them up lengthwise, securing them with toothpicks. Coat in flour and fry slowly all over in a pan in a mixture of rapeseed oil and the remaining herb butter. Trim the spring onions and slice each one in half. Braise them in a little oil in a second pan and serve with the fish. Serve with rice.
