The Healthiest Soup Has Been Named: it Takes Only 20 Minutes to Cook

Lunch is an integral part of our diet. A proper lunch consists of three courses – first, second, and dessert. Doctors and nutritionists have told us that the healthiest soup for lunch is lentil soup.

Lentil soup is very healthy. It contains 12 amino acids, fiber, and vegetable proteins. Lentil soup can also strengthen the immune system.

The second place, as it turned out, is vegetable soup, but with meat broth. A healthy vegetable soup includes such vegetables as green beans, zucchini, and celery.

In addition to vegetable soup in meat broth, you can cook vegetable soup with fish. Fish should be pollock or hake, but not canned fish.

Lentil puree soup – recipe

You will need:

  • Red lentils – 200 g
  • Potatoes – 2 pieces
  • Green onions
  • Carrot – 1 piece
  • Lemon – 1 piece
  • Salt, spices – to taste

Before making lentil soup, it is advisable to soak lentils overnight, or at least for 5 hours. Cook the lentils over low heat for about 50 minutes. Wash and peel the potatoes, onions, and carrots. Finely chop the onion and fry it over low heat.

Chop the potatoes and add them to the lentils, adding a little water. Then add the carrots and onions. Add salt and cover with a lid, cook over low heat until all the vegetables are cooked.

As soon as the vegetables are cooked, add a little broth, and butter, and blend everything with a blender. In the process, you can add a little more broth if you think there is not enough liquid. Pour the lentil soup into bowls and garnish with a sprig of green onion.
