The Impossible Apple Pie

Ingredients for 12 servings:

  • 2 cups whipped cream
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 lemon(s), grated peel
  • 5 eggs
  • 375 g flour
  • 1 packet of baking powder
  • 1 ¼ kg apples, sour
  • 4 tbsp lemon juice
  • 100 g butter
  • 100 g sugar
  • 4 tbsp milk
  • 60 g almond(s) (flakes)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, quarter, core, and slice the apples lengthwise into wedges, and toss with the lemon juice. For the batter, pour the cream into a mixing bowl. Add the sugar, vanilla sugar, and lemon zest to the cream and beat until stiff peaks form. Beat in the eggs one at a time. Sift the flour and baking powder and stir briefly. Spread the batter into a greased roasting pan. Top with the apple slices. Bake in a preheated oven at 200°C on the second rack from the bottom for 15 minutes. Meanwhile, bring the glaze, fat, sugar, and milk to a boil and mix in the almonds. After 15 minutes, dot the mixture over the cake. Bake for another 15 minutes on the second rack from the top.
