Onion cake with Emmental cheese

Ingredients for 4 servings:

  • 150 g flour
  • 150 g butter
  • 150 g cheese (grated Emmental)
  • 1 egg yolk
  • 1 tsp salt
  • 1 kg onion(s)
  • 100 g bacon (diced smoked bacon)
  • 1 bunch of parsley
  • 250 g sour cream
  • 2 eggs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place flour on a work surface. Add diced butter, cheese, egg yolk, and salt. Knead into a ball and let rest for a few hours—ideally overnight. Slice the onions. Render the bacon over low heat, then sauté with the onions until golden brown. While the onion mixture cools, chop the parsley and beat it with the sour cream and eggs. Season generously with salt, pepper, and nutmeg. Roll out the dough and line a large pie plate. Prick the base several times with a fork. Mix the onion mixture with the sour cream and pour into the pie plate. Bake at 180 degrees Celsius for approximately 35 to 40 minutes.
