The perfect trifle

Ingredients for 8 servings:

  • 250 g biscuits (Italian biscotti)
  • 100 ml white wine (Vin Santo) or sherry
  • 8 ripe figs, quartered lengthwise
  • 425 g cherry(s), pitted from the jar
  • 250 g mascarpone
  • 250 g double cream
  • 75 g sugar, light brown
  • 50 g chocolate, white
  • 50 g almond flakes

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Place the biscotti in a large bowl and soak them in the Vin Santo or Sherry (the biscotti should soften slightly, but not become too mushy!). Arrange the figs and cherries on top. Whisk the double cream in a bowl until stiff. Add the mascarpone and sugar and whip until stiff. Spread the cream over the biscotti and fruit and sprinkle with flaked almonds. Using a vegetable peeler, shave some chocolate and sprinkle over the trifle. Cover and refrigerate until ready to serve.
