- 2 kg asparagus, fresh white
- 60 g butter, melted
- Salt
- Sugar

the best way to prepare it!
Line a baking sheet with aluminum foil. Peel the asparagus and place them side by side on the foil. Season with salt and sugar and pour over the melted butter. Cover with a second sheet of foil, sealing the foil tightly. Cook in a preheated oven at 160°C (top/bottom heat) for 30 minutes. I find this method is best for larger quantities; I have prepared more than 5 kg of asparagus this way for guests (on two baking sheets, then with a fan oven at 180°C), always wrapping them in herb noodles with fresh cooked ham and serving them with hollandaise sauce. This preparation brings out the full flavor of the asparagus, and preserves the vitamins rather than boiling them away. There is another advantage to this preparation method: you can serve the asparagus hot in smaller portions on plates and keep the rest warm in the aluminum foil while the oven is turned off.
