Ingredients for 1 servings:

  • 1 pack of dry yeast, approx. 7 g
  • 300 ml water, warm, if necessary a little more
  • 500 g almond flour
  • 100 g flaxseed flour, defatted
  • 10 g psyllium husk flour
  • 20 g baking powder
  • 25 g sea salt
  • 10 eggs
  • 40 ml apple cider vinegar
  • 100 ml olive oil, mild, fruity, or melted butter

A high-protein, low-carb bread with an authentic texture – filling and versatile.

Mix the dry yeast with at least 300 ml of warm water. Let the mixture stand for about 10 minutes to activate the yeast. Combine the almond flour, flaxseed flour, psyllium husk flour, baking powder, and sea salt in a large bowl. Mix the ingredients thoroughly until evenly distributed. In a separate bowl, whisk together the eggs, apple cider vinegar, and melted butter or olive oil. The mixture should be smooth. Add the dry ingredients to the wet ingredients and mix thoroughly until a thick, smooth batter forms. Slowly add the yeast-water mixture and continue stirring until the batter has a sticky consistency. Add more warm water if necessary until the batter can be poured into the baking pan without being too runny. Prepare a loaf pan that fits the desired size of the loaf. A silicone pan is best, as it makes it easier to remove the bread later. Pour the batter into the prepared loaf pan, spread it evenly, and smooth the surface with a moistened spoon. Let the dough rise at room temperature in the switched-off oven for about 12 hours. Bake the bread in a preheated oven at 180°C (convection oven) for exactly 60 minutes, until golden brown. Remove the bread from the oven and then from the tin. Let it cool on a wire rack in the slightly open oven. Ensure the bread is completely cool before serving. Tip: Add almond slivers, cashews, or other nuts and seeds, if desired. This will change the nutritional value, but the bread remains keto-compliant. The apple cider vinegar makes the bread last a very long time in the refrigerator.
