Ingredients for 4 servings:
- 1 kg potato(s), waxy
- 100 g bacon (belly bacon), diced
- 100 ml Balsamic vinegar Bianco
- 400 ml chicken stock
- 2 tbsp mustard, medium hot
- 6 tbsp vegetable oil, tasteless
- 2 tbsp chives, in rolls
- 1 tbsp clarified butter
- salt and pepper

Potato salad without onions – very digestible and absolutely irresistible!
Boil the potatoes and then peel them. Cut them into even slices and place them in a bowl. Heat the bacon with a little clarified butter in a pan, deglaze with the balsamic vinegar, add the stock, and stir in the mustard. Let everything simmer for a while until it reduces considerably (10-15 minutes), then season generously with salt and pepper. Pour the hot marinade over the potato slices and mix well. Then add the vegetable oil and mix again. Add the chives, season again, and serve. Tip: If you don’t have fresh chives on hand, you can also soak dried chives in the vegetable oil and then add both.
