Thurgau cider cream

Ingredients for 10 servings:

  • 1 liter apple juice
  • 120 g sugar
  • 2 eggs
  • 50 g cornstarch
  • 2 dl cream
  • possibly Calvados

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the sugar and eggs in a bowl until creamy. Dissolve the cornstarch in a large pan with about 1 dl of the apple juice. Add the remaining apple juice and the egg-sugar mixture and bring to a boil briefly, stirring constantly. Then let it cool completely (this can be prepared up to two days in advance). Before serving, whip the cream until stiff peaks form and carefully fold it into the cold cream. Decorate with dried (or fresh) apple rings and serve. If desired, add a splash of Thurgados (or Calvados) on top.
