Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
200C. (So that the ham is a bit crispy on top!!) Puree all the ingredients except the fish, onion and lemon until you have a nice stuffing, season this with salt and pepper. Season 4 fish fillets and spread thickly with the stuffing. Place the second fillet on top and wrap it in the ham to hold it all together. Place in an ovenproof dish. Peel the lemon zest with a zester and chop finely. Squeeze the lemon. Roughly chop the onion and sauté in olive oil, add half the lemon zest and immediately deglaze with lemon juice and white wine and season lightly. But not too much, as the ham still gives off plenty of flavor. Pour the whole thing over the fish, scatter the remaining lemon zest on top and put it in the oven for around 20 minutes. It’s also good for lots of people as it’s easy to prepare. We ate a salad and fresh ciabatta with it!
