Tipsy peach cream à la Hairzblut

Ingredients for 4 servings:

  • 1 can peach(s), 850 ml
  • 200 g crème fraîche
  • 100 g cream cheese
  • 70 g sugar
  • 80 ml Cointreau
  • 200 ml cream
  • 1 pack of cream stiffener

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Drain the peaches and set the juice aside, then cut the fruit into pieces. Whisk the crème fraîche, cream cheese, sugar, and Cointreau until smooth and the sugar has completely dissolved. Stir in the peach pieces. Whip the cream with the cream stiffener until stiff and then carefully fold it into the peach cream. Refrigerate until ready to serve. You can also refrigerate overnight; if left to steep properly, the cream tastes even better and will be beautifully creamy and firm. The drained peach juice can be used to make a jelly, which, layered in glasses with vanilla pudding and crumbled biscuit or cake scraps, makes a perfect dessert the next day.
