Ingredients for 4 servings:

  • 1 cup(s) espresso, cold
  • 24 ladyfingers
  • 100 g cream
  • 4 tbsp brandy or amaretto liqueur
  • 300 g low-fat curd cheese
  • 250 ml milk
  • 140 g sugar
  • 1 packet of vanilla pudding powder

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 35 minutes

Prepare the vanilla pudding according to the instructions, but only use 250 ml of milk and 70 g of sugar. This will produce a very thick pudding. Set aside and cover with cling film to prevent a skin from forming. In a mixer, vigorously mix the low-fat quark, the remaining sugar, and the brandy. Then gradually stir in the lukewarm vanilla pudding. Whip the cream until stiff peaks form and carefully stir it into the quark and pudding mixture. This is a low-fat cream and a substitute for the mascarpone. Place the sponge fingers on a flat plate and, using a tablespoon, drizzle the espresso over both sides of the sponge fingers. Now alternate layers of cream and drizzled sponge fingers in a dish. The final layer is the cream, which is then thickly dusted with cocoa powder. Let it rest in the refrigerator for at least an hour. Tip: It tastes best if prepared the day before.
