Ingredients for 8 servings:
- 8 ladyfingers
- 3 tbsp coffee, boiled (espresso), strong, chilled
- 6 tbsp liqueur (coffee liqueur)
- 3 egg yolks
- 250 ml cream
- 250 ml mascarpone

Combine the espresso and coffee liqueur and soak the sponge fingers in it. Combine the egg yolks and cream in a rose shape and whisk until cold – this works best with a whisk in a KitchenAid. Then add the mascarpone and mix well. Finely chop the sponge fingers and stir into the mixture. Then pour everything into an ice cream maker and freeze for about 30-40 minutes. Tip: If you like, you can also add the seeds of half a vanilla pod to the cream.
