Toast Bread – White Bread Baked in Glass

The perfect toast bread – white bread baked in glass recipe with a picture and simple step-by-step instructions.

  • 1 kg Wheat flour type 550
  • 1 cube Yeast
  • 1 tbsp Honey liquid
  • 1 heaped tsp Salt
  • 1 heaped tsp Ground bread spice
  • 50 g Sunflower seeds
  • 50 g Sesame seeds, peeled
  • 0,5 liter Water, lukewarm, Ca specification
  • Butter for the mold
  • Sesame seeds, sunflower seeds or flour for the form
  1. Prepare a pre-dough from the yeast, honey, 3 tablespoons of flour and a little lukewarm water. Stir lump-free, cover and wait until the pre-dough has at least doubled.
  2. Mix the other dry ingredients in the meantime.
  3. When the pre-dough has risen nicely, mix it with the dry ingredients and add enough lukewarm water to make a smooth, easily malleable dough. Knead well – with the food processor for about 5 minutes.
  4. Cover and let rise in a warm place – the batter needs to double in size.
  5. In the meantime 6 – 7 mason jars a 750 ml (tumbled glasses! Important!) Grease well with butter and sprinkle with the grains or flour. This is important so that you can get the bread out of shape again. Attention: the upper edge with crumbs and fat remain free. Please work cleanly and carefully, otherwise all effort will be in vain.
  6. Divide the proofed dough into 6 – 7 portions, work through again with your hand and pour into the prepared glasses. These may only be half full. Otherwise, the dough will rise over the rim of the glasses when baking. If this is the case, you have to take the bread out of the jar after it is finished and before preserving, and cut one or 2 slices from below so that the lid fits well on the jar.
  7. Place the jars without lids in the preheated oven on the cold (!) Rack and bake at 180 degrees top / bottom heat for 40 minutes. Then carefully remove from the oven and let cool down a little.
  8. In the meantime, bring the rubber rings to the boil in vinegar water and prepare the canning pot. Bring the water to the same temperature as the bread glasses. There should be enough water in the wake-up pot that 3/4 of the wake-up food is in the water. Close the jars properly, clamp them shut and put them in the wake-up pot. A helping hand is very pleasant here. Because the glasses like to float up. Therefore complain from above. E.g. with a saucepan, a plate, etc.
  9. Preserve the bread at 100 degrees for 30 minutes. Then take it out and let it cool down completely. Then loosen the clamps. The bread will keep for at least 6 months if properly stored.
  10. Alternatively, you can simply put rubber, lids and clamps on the bread after baking and let it draw a vacuum. However, they do not last that long.
