Ingredients for 1 servings:

  • 2 slices of whole-grain toast
  • 1 banana(s)
  • 200 g soy yogurt (yogurt alternative), unsweetened
  • Cinnamon
  • 2 strawberries
  • 1 handful of blueberries
  • 1 egg(s)
  • some oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Cut the crust off the whole-wheat toast and roll out each slice thinly with a rolling pin. Puree the banana and then mix with yogurt and a pinch of cinnamon. Spread some of this mixture on the toast slices. Thinly slice the strawberries and arrange them in a row on the toast slices. Place the blueberries in a row on the slices, then roll up the bread. Crack the egg into a bowl and whisk. Dip the toast rolls into the egg and fry them in a pan. Serve the fried rolls with the remaining cream and the remaining fruit. Any other fruit can be used.
