Toddler-friendly goulash

Ingredients for 4 servings:

  • 1 kg roast pork (salmon roast)
  • 1 small onion(s)
  • 1 ½ liters vegetable broth
  • 2 tbsp tomato paste
  • 3 tbsp mustard, medium hot
  • 2 carrots
  • 1 small can of mushrooms
  • n. B. Salt
  • n. B. Pfeffer
  • n. B. herbs
  • n. B. Sauce thickener
  • 1 tbsp crème fraîche
  • e.g. sunflower oil

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes

First, chop the onion into small cubes, then trim the pork loin of coarse fat and also cut it into small cubes. Brown everything together in a pan or non-stick pot with hot oil until the meat is lightly browned. Season to taste. In the meantime, peel the carrots and chop them into fine pieces. Then deglaze the meat with vegetable stock. Add tomato paste, mustard, carrots, and the small can of mushrooms. Fresh mushrooms also work, but they also need to be fried. Now stir in sauce thickener if desired until the desired consistency is reached and simmer well so that the meat is already tender. Just before serving, add a tablespoon of crème fraîche and season to taste. I also like to add some fresh parsley. This goes well with boiled potatoes, rice, spaetzle, or croquettes.
