Tofu rosso with vegetables and rice

Ingredients for 2 servings:

  • 2 servings of rice
  • salt water
  • 1 pack of Tofu Rosso (e.g. from Taifun)
  • 2 zucchinis
  • 3 beefsteak tomatoes
  • 1 tsp, leveled vegetable broth, vegan, instant
  • 1 tbsp tomato paste
  • 1 small onion(s)
  • lots of herbs (basil, parsley, …)
  • 2 cloves garlic
  • n. B. water
  • n. B. Oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook the rice in salted water according to the package instructions. Meanwhile, combine some water in a small cup with tomato paste, herbs, and vegetable stock. Cut the tofu rosso, tomatoes, onion, and zucchini into nice-sized pieces. When the rice is almost done, heat a little oil in a pan and briefly sauté the onion. Add the tofu, tomatoes, and zucchini, press in the garlic, and fry everything. Then add the contents of the cup and heat until hot. Season with salt and pepper and serve with the rice.
