Tomato and fennel tartar

Ingredients for 2 servings:

  • 200 g fennel
  • 40 g red bell peppers
  • 2 tomatoes, a good tasting variety
  • 30 g cheese, e.g. mountain cheese
  • 1 tsp Balsamic vinegar (fig balsamic)
  • 2 tsp chili oil
  • e.g. salt (Sal de Flor Hibiscus)
  • some sprigs of dill, fresh
  • Pepper from the mill
  • Cheese for serving

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the vegetables and cut into very small cubes. Remove the seeds and white membranes from the peppers, and the stems from the tomatoes. Cut the cheese into very small cubes. Finely chop the fennel greens and dill. Place everything in a bowl and season with oil, salt, and balsamic vinegar. Season with a little pepper. Place a slice of cheese, previously cut out with the serving ring, on the plate. Using the serving ring, add the tartar and press in a little. This will help the salad stack better. This is a very fresh salad and, when prepared this way, is perfect for any buffet.
