Tomato and goat cheese patties

Ingredients for 12 servings:

  • 70 g tomatoes, dried in oil
  • 1 zucchini
  • 1 clove(s) garlic
  • 250 g puff pastry, frozen
  • 150 g goat’s cheese
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Drain and finely chop the tomatoes. Thinly slice the zucchini and cook over medium heat for 8-10 minutes, stirring occasionally. Add the crushed garlic and cook for another 30 seconds. Remove from the heat and let cool. Preheat the oven to 220°C. Roll out the puff pastry thinly and cut out 12 circles (8 cm in diameter). Place on a baking sheet and prick a few times with a fork. Spread the zucchini mixture and tomatoes over the circles, leaving a 1 cm border. Add 1 teaspoon of goat cheese and a little tomato oil to each circle and sprinkle with salt and pepper. Bake the patties for 10-15 minutes. They should be well risen and lightly browned. Serve warm.
