Tomato and Onion Soup Happened
The perfect tomato and onion soup happened recipe with a picture and simple step-by-step instructions.
- 500 gs fully ripe Cherry tomatoes red
- 2 bunch Spring onions
- 1 size Onion
- 2 Solo garlic
- 2 Lovage branches
- 3 Lemon thyme sprigs
- 3 tablespoon Extra virgin olive oil
- 1 small can Chunky tomatoes
- 1 tablespoon Tomato paste
- 1 teaspoon Salt
- 0,5 teaspoon Seasoned pepper
- 0,5 teaspoon Sugar
- 0,5 teaspoon Red chilli flakes
- 1 liter Vegetable broth hot
- 1 raw Liquid onion
- Wash the tomatoes, cut them in half and remove the green wedges. Remove the dead green from the spring onions and then cut into slices: Dice the onion, chop the garlic and chop the lovage branches.
Preparation:
- Heat the oil in a large saucepan and gently sauté the diced onion in it. Add the tomatoes and spring onions, sweat vigorously once, then add the tomato paste, garlic, the chunky tinned tomatoes, lovage, lemon thyme sprigs and all the spices, fill up with the vegetable stock and simmer the soup covered for about 30 minutes.
- Work thoroughly with the hand blender and then rub through a sieve, squeezing it out vigorously with the back of the spoon so that none of the delicious liquid is lost.
- I “refreshed” the ready-made soup with a raw grated onion ** and then we enjoyed it with a small pizza as a main course … a delicious, light summer meal!
