Ingredients for 4 servings:
- 6 slice(s) white bread, thin, one day old, without crusts
- 2 onions, diced
- 2 cloves garlic, diced
- 1 red bell pepper(s), cut into strips
- 1 bell pepper(s), green, cut into strips
- 3 tbsp olive oil
- 1 kg tomatoes, roughly diced
- 2 tbsp tomato paste
- 1 tsp thyme, dried
- 1 tbsp vinegar (red wine vinegar)
- 2 tsp sugar
- salt and pepper

Sauté the onions, garlic, and bell peppers. Add the remaining ingredients and simmer until a thick sauce forms. Season with salt and pepper. Line a pudding dish with slices of bread. Pour in the sauce and top with slices of bread. Cover with a plate and place a heavy object on top. Refrigerate overnight. Turn out onto a plate just before serving.
