Tomato and rocket salad

Ingredients for 4 servings:

  • 500 g tomatoes (vine)
  • 2 bunches of rocket (arugula)
  • 1 handful of wild rocket, to taste (can also be omitted)
  • 1 tbsp olive oil
  • 2 tbsp Balsamic vinegar, white
  • 1 tsp sugar
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the tomatoes, halve them, remove the stems, and cut into thin pieces. Wash the arugula and spin it dry (I always remove the bottom part of the stems, as they don’t taste very good), then cut it into strips and add it to the tomatoes. Make a salad dressing with vinegar, sugar, salt, and pepper, season to taste, and finally stir in the olive oil. Mix everything well with the tomatoes and arugula and serve. We love eating this salad in the summer; either with baguette or at a barbecue.
