Tomato – Arugula – Pizza

Ingredients for 3 servings:

  • 200 ml water
  • 400 g flour (wheat flour type 405)
  • 4 tbsp oil (olive oil)
  • ¾ tsp salt
  • ¾ tsp sugar
  • 30 g yeast
  • 1 can/n tomato(s) (Pizza tomatoes)
  • 200 g Parmesan, grated
  • 4 tbsp oil (olive oil)
  • 1 bunch arugula
  • 50 g salami, in slices, wafer-thin
  • 3 tbsp vinegar (red wine vinegar)
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Knead the dough ingredients until smooth. Let it rise for 30 minutes. Roll the pizza dough onto a baking sheet. Brush 1 tablespoon of olive oil over the dough. Top with the pizza tomatoes, then the salami, and then the grated Parmesan cheese. Let it rise for another 30 minutes, if necessary (depending on how thick you prefer the dough). Preheat the oven to 160°C (320°F) and bake the pizza for about 30 minutes. In the meantime, combine the vinegar, remaining oil, a little salt, pepper, and sugar. Add the washed, torn arugula. Spread the arugula on the hot pizza and serve.
