Ingredients for 1 servings:
- 2 tsp fennel seeds
- 1 tbsp tomato paste
- 2 tsp white wine vinegar
- ½ tsp salt
- 1 pinch(s) black pepper, freshly ground
- 150 g butter, room temperature or salted butter

Roast the fennel seeds in a pan and then finely grind them in a mortar and pestle. Brown the tomato paste in the pan. Add the vinegar and simmer for about 1 minute. Let everything cool slightly. Add all ingredients to the butter and whisk until fluffy. Chill the butter. This butter makes a great accompaniment to the crayfish dinner and is served with crispbread or on potatoes.
