Plum dumplings made from pasta dough

Ingredients for 4 servings:

  • 500 g flour
  • 4 eggs
  • 3 egg yolks
  • 1 pinch of salt
  • 24 plums
  • 24 pieces of sugar cubes
  • butter
  • Sugar
  • Cinnamon

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 55 minutes

Knead the flour, eggs, and egg yolks with a pinch of salt to form a smooth dough, cover, and let rest for 30 minutes. Then roll out the dough, not too thinly, and cut out circles of about 8 cm (I prefer to use a glass for this). Remove the stones from the plums by cutting into them but not all the way through. Place a sugar cube in each place. Place a plum on each piece of dough, close it up, and press the edges shut. Boil in lightly salted water for about 5 minutes, then drain. Toss in foaming brown butter and sprinkle with sugar and cinnamon.
