Tomato curry sauce with farfalle

Ingredients for 2 servings:

  • 800 g tomatoes or cherry tomatoes
  • 2 small apples, sweet
  • 250 g minced meat
  • curry powder
  • Rosemary, dried, ground
  • Salt
  • Parsley
  • 500g farfalle

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Use leftovers

Halve the tomatoes or cherry tomatoes, or quarter them if they’re too large. Peel and finely chop the apples. Chop the parsley and add it. Simmer everything in a pot. Meanwhile, season the minced meat with a little salt and fry, making sure to leave some small pieces. Cook the pasta according to the package instructions. Blend the tomato sauce with a hand blender until smooth. Then add the minced meat. Season the sauce with salt, curry powder, and rosemary powder and serve with the pasta.
