Pasta with sausage and zucchini

Ingredients for 6 servings:

  • 3 large zucchini
  • 10 sausages
  • 1 onion(s), red
  • 100 g Grana Padano or Parmesan
  • 100 ml red wine
  • 400 g pasta of your choice
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

A hearty treat with Italian flair

Wash and chop the zucchini. Dice the onion. Cut a small slice into small pieces. Cut the sausage lengthwise and carefully peel off the skin. Sauté the onions and zucchini together in a pan until the zucchini is cooked through. Season with pepper and a little salt, as the sausage is already quite salty. Place the zucchini and onion mixture in a large blender (alternatively, use a tall container and an immersion blender) and puree with the cheese. Boil the pasta water and cook the pasta (I like to use short ribbon pasta) according to the package instructions. Crumble the sausage into the pan and fry briefly. Deglaze with the red wine and simmer until the liquid has evaporated. Add the cooked pasta to the pan with the sausage, pour the zucchini puree over it, and mix everything together. Serve immediately. Tip: Before blending, set aside a few spoonfuls of the zucchini and onion mixture so that you have a few whole pieces left in the dish later.
