Ingredients for 1 servings:

  • 1 small onion(s)
  • 2 m.-large plum tomatoes
  • 2 tbsp balsamic vinegar, lighter
  • 2 tbsp vinegar (raspberry red wine vinegar)
  • 4 tbsp olive oil, mild
  • 2 tbsp chives
  • salt and pepper
  • Paprika powder, sweet
  • Sugar
  • Cayenne pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

light summer dressing

Finely dice the onion. Remove the stems from the tomatoes and puree in a food processor. Strain the puree through a sieve. Season with both vinegars, olive oil, salt, sugar, pepper, cayenne pepper, and paprika, and blend. Add the diced onion and chives and stir to combine. This pairs perfectly with baby lettuce (or lettuce hearts) and other leafy salads.
