Ingredients for 4 servings:

  • 1 kg tomatoes
  • 2 onions, peeled and finely chopped
  • margarine
  • 100 g bacon, streaky
  • 200 g sausage (hunting sausage)
  • Sausage, leftovers or roast leftovers
  • 1 tbsp flour
  • 1 pinch(s) thyme
  • 1 tbsp celery greens, chopped
  • Salt
  • Cayenne pepper

Dice the bacon, sausage, and any leftover sausage or roast meat and fry them with the onions in the margarine until golden brown. Meanwhile, wash the tomatoes, remove the stems, quarter them, and add them to the pot. Season with salt, cayenne pepper, and thyme, cover, and simmer until soft. Dust with flour, stir, and simmer for a few more minutes. Serve sprinkled with chopped celery leaves and served with bread or rolls.
