Ingredients for 1 servings:

  • 250 g onion(s)
  • 2 garlic cloves
  • 1,800 g tomatoes, ripe
  • 20 g mustard powder
  • ¼ liter vinegar
  • 20 g salt
  • 1 tsp, leveled herbs
  • ¼ tsp cayenne pepper
  • 1 tsp, leveled paprika powder
  • 360 g sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cooking time approx. 2 1/2 hours

Peel and chop the onions, finely crush the garlic cloves in salt. Quarter the tomatoes and cook with the garlic until soft, then strain through a sieve while still hot. Mix the flavorings and heat until the sugar has dissolved. Then add the tomato paste, season to taste, and simmer over medium heat in an uncovered pot until thickened. While boiling, pour into bottles or jars and seal airtight. For spicy ketchup, use 2 teaspoons of herbs, 1 teaspoon of cayenne pepper, 2 1/2 teaspoons of paprika, and 250g of sugar.
