Ingredients for 3 servings:
- 150 g tomatoes
- 150 g feta cheese, preferably Patros
- 50 g spring onions
- 4 sprigs of parsley
- Thyme, fresh or dried
- Oregano, fresh or dried
- Rosemary, fresh or dried
- salt and pepper
- Spice(s) to taste
- 1 tbsp oil (dill oil), if not available also olive oil pickled with dill
- ½ tsp chili powder

First, wash the tomatoes and cut into pieces. Wash the spring onions and slice thinly. Wash the parsley, remove the leaves from the stems, and chop finely. If using fresh herbs, wash them, tear the rosemary into small pieces, and prepare the rest as well. Sprinkle the dried herbs over the tomato pieces. Cut the feta cheese into medium-sized pieces. Place all the ingredients in a bowl and mix well, then season with salt and pepper. I personally like to add a little more spice, but you can adjust the seasoning to your liking. Add the chili powder and drizzle the dill oil over the salad, then season to taste. Finally, sprinkle with fresh parsley and serve.
