Tomato salad with arugula

Ingredients for 4 servings:

  • 500 g tomatoes, ripe
  • 2 bunches of arugula
  • 1 onion(s)
  • 3 tbsp balsamic vinegar
  • 6 tbsp olive oil
  • salt and pepper
  • 50 g Parmesan

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the tomatoes, remove the stems, and slice. Wash and trim the arugula, remove the thick stems, and slice the leaves. Peel and finely chop the onion. Arrange the tomatoes, arugula, and onions on plates. Mix the balsamic vinegar, olive oil, salt, and pepper to make a marinade and pour it over the salad. Grate Parmesan cheese over the salad, if desired.
