Tomato salad with Chinese-style dressing

Ingredients for 2 servings:

  • 6 m.-large tomato(s)
  • 2 onions, red
  • 1 bulb(s) garlic, Chinese
  • 1 small chili pepper(s)
  • 3 tbsp orange juice
  • 2 tsp, heaped hoisin sauce
  • 2 tsp chicken stock
  • 4 tbsp rice wine vinegar
  • 4 tbsp sesame oil, toasted
  • 2 tsp honey
  • e.g. Szechuan pepper, freshly ground
  • e.g. chili salt
  • 1 cm ginger

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour

For the dressing, peel and finely dice the garlic and ginger, and place them in a small bowl. Remove the seeds and skin from the chili pepper, finely dice, and add to the other ingredients. Add the orange juice, rice wine vinegar, chicken stock, honey, hoisin sauce, and sesame oil. Season with Szechuan peppercorns and chili salt. For the salad, dice the tomatoes and place them in a bowl. Peel the onions, halve them, slice them into rings, and add them. Mix and drizzle with the dressing. Let stand for 30 minutes, then stir again.
