Ingredients for 4 servings:

  • 1 onion(s)
  • 1 large zucchini
  • 2 m.-large carrot(s)
  • 2 can/n tomatoes, chunky (approx. 400 g)
  • some tomato paste
  • salt and pepper
  • ½ bunch basil, possibly frozen
  • some oil
  • Parmesan, freshly grated

Working time approx. 30 minutes; Total time approx. 30 minutes

how my children like to eat

First, dice the zucchini and carrots, then the onion. Heat the oil in a pan and sauté the zucchini and carrot pieces for a few minutes. Then add the onion pieces and sauté briefly. Then add the two cans of chopped tomatoes. Cover and cook until the vegetables are soft, stirring occasionally. Then add tomato paste to taste and stir. Season the sauce with salt and pepper, and only add the basil at the very end, when it’s no longer boiling. We always serve this with spaghetti and freshly grated Parmesan cheese… simply delicious.
