Tomato sausage salad with sheep cheese

Ingredients for 3 servings:

  • 500 g cocktail tomatoes
  • 350 g meat sausage (poultry)
  • 1 large onion(s), red
  • 100 g sheep’s cheese
  • 2 tbsp basil, finely chopped
  • 2 tbsp Balsamic vinegar, white
  • 3 tbsp olive oil
  • 1 tbsp honey (acacia), liquid
  • Salt and pepper, black

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Hearty salad with balsamic dressing

Halve or quarter the cherry tomatoes, depending on their size, and finely dice the onion. Cut the sausage into large cubes or strips. For the dressing, combine the balsamic vinegar, olive oil, honey, salt, and pepper. Place the tomatoes, onion, and sausage in a bowl with the dressing. Mix well and let it marinate in the refrigerator for at least 1 hour. Before serving, add the chopped basil and crumble the feta cheese by hand, then scatter it over the prepared salad. This salad goes best with fresh bread, baguette, or pretzels.
