Tomato soup made from tomato paste

Ingredients for 1 servings:

  • 1 tbsp butter
  • 2 tbsp flour
  • 1 jar water, cold
  • 2 tbsp tomato paste
  • pinch(s) of salt
  • possibly grated cheese

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

In a saucepan, whisk the butter and flour together to form a roux. When the flour is lightly browned, add the tomato paste and mix well with a whisk. Add the water a little at a time, stirring well, until the soup is no longer too thick. You may not need the entire glass of water; this depends on how thin you want the soup to be. Now simmer the soup until a light white foam forms. Then just add a pinch of salt, stir, and the soup is ready. If you like, you can serve the soup with grated cheese (we always use Emmental). Alternatively, you can top the soup with croutons, chives, or a dollop of cream.
