Tomato Soup or Tomato Sauce
The perfect tomato soup or tomato sauce recipe with a picture and simple step-by-step instructions.
Herbs and spices:
- 1000 g Good tasting tomatoes
- 5 Toes Garlic
- 200 g Onion
- 300 ml Vegetable broth depending on the desired consistency
- Thyme, olive herb, oregano, sage 8 leaves, rosemary, mint
- All fresh herbs that I have in the garden
- 1 Tl Paprika, mild
- 1 Tl Curry, mild
- 1 Tl Harissa
- 0,5 Tl Sugar
- 2 Tl Salt
- 1 Tl Clarified butter
- Remove the stalk from the tomatoes, cut the onion. Peel the garlic and cut into small pieces.
- Fry the onion in a little clarified butter. Then add the tomatoes, garlic and broth. Let all the herbs and spices boil.
- When everything is soft enough, strain the mixture through a sieve. Season to taste and add the sugar to taste.
- Can be taken as a soup or as a sauce and, depending on your taste, refined with cream or sour cream.
