Tomato soup with ginger

Ingredients for 4 servings:

  • 1 kg beefsteak tomatoes
  • ½ liter vegetable broth
  • 1 garlic clove(s)
  • 1 tsp sugar
  • 3 pieces of ginger, candied
  • 250 g whipped cream
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cut the beefsteak tomatoes into small pieces. Add the tomato pieces, garlic clove, sugar, and a pinch of salt to the vegetable broth and simmer for 20-25 minutes. Strain through a fine sieve and grind pepper over it. Bring back to a boil briefly and season to taste. Finely slice the ginger. Whip the cream, stir in the ginger, and garnish each serving of tomato soup with a spoonful.
