Simone's cheese spaetzle from the pan

Ingredients for 4 servings:

  • 300 g flour
  • 4 eggs
  • 2 tbsp lard (alternatively oil)
  • 200 g cheese (Gouda)
  • salt and pepper

Instructions

Mix the flour and eggs with 1 teaspoon of salt and water as needed to form a thick dough. Let the dough rest for 30 minutes. Meanwhile, bring a large pot of salted water to a boil and grate the cheese. Press the dough in portions through the spaetzle press into the boiling salted water. The spaetzle are ready as soon as they rise to the surface. Remove from the pot with a slotted spoon and drain. Heat lard or oil in a pan. Add the drained spaetzle to the hot fat and fry for 10 minutes, turning on all sides. Sprinkle with the grated cheese, season with a little salt and pepper, and fry for another 10 minutes, turning occasionally. The cheese spaetzle are ready when they are golden brown all over. Serve best with a green or mixed salad.
