Tomato – Vegetable – Sauce

Ingredients for 1 servings:

  • 1 large onion(s)
  • 2 carrots
  • 1 small zucchini
  • 2 cloves garlic
  • 1 bell pepper(s), green
  • 1 red pepper
  • 4 tbsp olive oil
  • 1 tsp sugar
  • 1 tbsp tomato paste
  • 3 cans of peeled tomatoes (400g capacity)
  • 1 tsp vegetable broth
  • herbs, Italian
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for stock

Chop the vegetables. Heat oil in a pan and sauté the vegetables. Sprinkle with sugar and let it caramelize slightly. Add tomato paste and let it sweat slightly. Add the tomatoes, season with vegetable stock and herbs. Simmer on low heat for at least 45 minutes. The longer the better. Season with salt and pepper and pour into hot, rinsed jars. Seal, cover, and let cool. In summer, you can, of course, also use fresh tomatoes.
