Tomato vinaigrette

Ingredients for 4 servings:

  • 2 m.-large tomato(s)
  • 1 tsp mustard
  • 5 tbsp apple cider vinegar
  • 1 tsp honey
  • 7 tbsp rapeseed oil
  • salt and pepper

very easy to make and very tasty

Blanch the tomatoes, peel, and deseed them. Place the core and seeds in a tall mixing bowl and finely dice the tomato flesh. Set the diced tomatoes aside. Purée the inner flesh, add all the other ingredients, and continue blending. Finally, fold the diced tomatoes into the sauce and season with salt and pepper, if desired. The sauce tastes wonderful with cooked green asparagus, as a salad dressing with mixed greens, or with spring onions and a little more vinegar with potato salad.
