Tomatoes topped with mozzarella

Ingredients for 1 servings:

  • 1 large tomato(s)
  • ½ package of mozzarella
  • possibly mushrooms, or spring onions or leeks
  • possibly mountain cheese or Parmesan
  • basil
  • olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Quick and delicious! Also suitable for using up leftover leeks, spring onions, and mushrooms

Slice the tomato and layer it in a baking dish. Season with salt and pepper, and sprinkle with finely chopped basil. Place 1/2 a package of mozzarella, also sliced, on top. Season with salt and pepper again. Add the remaining ingredients (if available or desired) – ideally underneath the mozzarella. You may want to add a little other cheese or olive oil. Olive oil isn’t essential, though, as the ingredients themselves release enough liquid. Grill for 10-15 minutes at approximately 200°C. Serve with toasted bread.
